  • The famous Taiwanese Anka paste is made by fermenting glutinous rice with a special red yeast (Monascus Anka), salt and sugar.  The end result is a rich red paste that adds depth of flavor and sweetness to meat. 
  • Traditionally, the paste is mostly used by the Hakkas in Taiwan.  But today, it is enjoying a renewal in interest because of its beneficial qualities. 
  • It is also used for its natural food coloring quality -- it adds a beautiful red hue to pork.
